Heat Units
The British unit of heat is the pound degree F--the quantity of heat required to raise the temperature of a pound of water from 32° to 33° F. The C. G. S. unit is the gram-degree C.; another metric unit is the kilogram-degree C. The latter is the calorie; the former is sometimes called the small calorie or the joule; the latter is sometimes called the large calorie. The term joule is also applied to a quantity of heat equivalent to the energy of a watt-second or volt-coulomb. This is equal to .24l gram degree calorie.

Scoville scale

The Scoville scale is a measurement of pungency (spiciness or "heat") of chili peppers and other substances, recorded in Scoville heat units (SHU), based on the concentration of capsaicinoids, among which capsaicin is the predominant component.

The scale is named after its creator, American pharmacist Wilbur Scoville, whose 1912 method is known as the Scoville organoleptic test. The Scoville organoleptic test is a subjective assessment derived from the capsaicinoid sensitivity by people experienced with eating hot chilis.

An alternative method, high-performance liquid chromatography (HPLC), can be used to analytically quantify the capsaicinoid content as an indicator of pungency. As of 2011, the subjective organoleptic test has been largely superseded by analytical methods such as HPLC.
